Vegetable Beef and Biscuit Casserole


Vegetable Beef and Biscuit Casserole

1-1/2 to 2 pounds ground beef
1 can creamed corn
1 can condensed tomato soup
1/3 cup water
15 ounce can Veg-All, drained
1 Tablespoon Worcestershire sauce
4 ounces Velveeta, chunked
1 cup shredded Mexi-blend cheese or cheddar
1 pkg refrigerated (whopped) biscuits


Brown ground beef, drain if needed.
Add tomato soup, veggies, water, Worcestershire sauce, and Velveeta.
Pour into 9x13 or similar size baking dish. Bake for 15-20 minutes at 350 degrees.
Meanwhile, quarter biscuits. Remove dish from oven and place biscuits on top.
Add the shredded cheese and bake for 10-15 more minutes (depending on biscuit instructions.)

Sloppy Joes


Sloppy Joes

2 pounds ground beef
1/2 cup chopped onion
2 celery ribs, chopped
1/2 cup green pepper, chopped
1 2/3 cups canned crushed tomatoes (I use diced and mash them)
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1 tablespoon steak sauce
1/2 teaspoon garlic salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
buns
Velveeta cheese (optional)

Dice veggies
Brown veggies and hamburger in large skillet or Dutch oven. Drain if needed.
Add rest of ingredients (except buns and cheese.)
Cook for 30-45 minutes mashing with potato masher to crush tomatoes and incorporate all the ingredients together.
Sauce will thicken as liquid evaporates.
If you are adding Velveeta add it at the end. Serve on a bun with shreded cheese or slices if you like or eat it as is!

**The sloppy joe meat mixture can be frozen to be thawed and reheated at another time.
