Baked Eggnog Mini Donuts with Eggnog Glaze

Even if you don't like or drink egg nog you need to try these little goodies.  There is eggnog in the donut as well as the glaze.  What a wonderful treat for your family!


Eggnog Mini Donuts with Eggnog Glaze (Makes 18)

Donuts:
2-1/2 Tablespoons canola oil
1/4 cup sugar
1 egg
scant 2/3 cup eggnog
1 cup flour
2 teaspoons baking powder
1/4 teaspoon baking soda
couple dashes salt
ground nutmeg*

Glaze:
1 cup powdered sugar
2-4 Tablespoons eggnog


Using a whisk, mix together the oil, sugar, eggs, and eggnog. 
 In separate bowl mix the flour, baking powder, and baking soda.
 Slowly add the dry ingredients to the wet and mix until smooth.  
*I used our local Kalona Supernatural organic eggnog.  It has a great flavor that is just the right spice for this donut without adding more spices to the batter.
 Scoop the batter into a disposable decorating bag. 
Cut the end off and pipe into the donut maker. Don't worry about the little ends.  They'll melt down into the donut. Shut lid and let cook.  I peeked at mine after a minute or so and saw the bottom was getting browner than the top so I flipped them and cooked them a little long.  Shouldn't take more than 3-4 minutes total. (If you have a pan to use in the oven try 350 degrees for 8-10 minutes.)
For the glaze you'll need to put your powdered sugar in a bowl and slowly add some eggnog stirring until it's the right consistency . Depending on how thick your nog is will determine how much you need.  You don't want the glaze stiff like frosting but you don't want it thin like milk.
Dip the donut tops into the glaze.  I chose whichever side didn't look as nice.
 Tada!

  1. That is a cute donut maker! I just got one, but it's a pan to bake the donuts. Going to try it today but with a chocolate recipe. I would LOVE this recipe, but my kids do not enjoy eggnog. One day I will make some for just me! They look delicious!

    1. I didn't care for the eggnog straight so I thought if I used it in something it would be OK. It gives just enough flavor with the rum extract and spices in the nog to say "hello" without screaming it.
