Simple Carrot Soup

I've never been successful at growing carrots so I always purchase them.  We bought a huge bag of organic carrots a while ago.  Some of them we use in our smoothies, some in our dishes and then my husband asked me for a soup made with the carrots. This soup is creamy and easy to make.  The ingredients are easy to find. 

It makes a great side dish, adding a grilled cheese sandwich to round it out or serve it with some grilled chicken. 

A fancy blender will give you a smoother soup but you can still fine with an immersion blender, food processor or regular style blender.  Check out my tips at the bottom for your type of appliance.

Simple Carrot Soup                                                                                   Printable Recipe

olive oil
1 small onion, grated
4 large carrots, grated
2 cups chicken broth
1 cup water
2 Tablespoons orange juice
4 dashes cayenne pepper (more or less to your taste)
2 Tablespoons honey (more or less to your taste)
Salt and pepper to taste


Drizzle some olive oil in a large pot. Add onions and carrots and allow to cook for about 5 minutes.
Add in broth, water, and orange juice.
Cover and cook on low until carrots are soft. Since the veggies are grated it doesn't take long, maybe 15 minutes.  You can test by smash a carrot or onion piece on the side of the pan to see how soft it is.
Transfer to a blender and add in the cayenne pepper and honey. Blend until smooth.  Test it and add salt and pepper as  you like.
 Extras can be frozen for another time.
Blending HOT soups...
My fancy blender has vent holes to allow the pressure of the heat out while it blends.  If your blender has a removable plastic cap in the middle of your lid, tilt it so it has a little vent.  Cover with paper towel in case any splashes up and out.  You can also opt to let your veggies cool, blend it all, then heat in the sauce pan.
