Grilled Tarragon Marinated Steak

Grilled Tarragon Marinated Steak

1-2 pound flank steak (I used Sirloin Tip Steak)
2 Tablespoons Soy Sauce or Fauxy Sauce (Soy Sauce Substitute)
1 Tablespoon olive oil
1 teaspoon smoked paprika (La Chinata is the best!)

In a small bowl mix together all the ingredients. 
Pour into a zipshut bag and place meat inside   Marinade for at least 2 hours. Remove from fridge at least 15 minutes ahead.
Flank is great grilled over high heat.  For my thicker steak each time I moved it for the marks I put it on a new part of the grill but kept the heat medium.  My family (not me!) prefers theirs well done so I go a little slower.

You can baste with the marinade as you cook the meat as long as you put it in a pan and bring it up to a boil since you had raw meat in int.
Slice thin to serve.  Would be awesome in a sandwich! 
Chef Gaby also says you can slice thin and use as a stir fry, just be sure your wok is smoky hot!!

Three Bean Baked Beans

What BBQ wouldn't be complete without a side of baked beans?  This one takes a little bit more effort than the usual can of pork n beans that has been doctored but the flavor is worth it!

I always make extra and freeze it.  Thaw, heat and eat!


Three Bean Baked Beans                                                       Printable Recipe

2/3 cup EACH black, pinto, and great northern beans
8 cups water
5-6 bacon slices, chunked, cooked, and drained
1/3 cup diced onion
2 teaspoons dry mustard
3/4 cup ketchup
2 Tablespoons apple cider vinegar
3 Tablespoons honey
2 Tablespoons molasses
3/4 cup water

In large ovenproof stockpot add the beans and water.  Be sure to pick through your beans as sometimes there can be rocks.  Bring to boil and boil for 1-1/2 hours, maybe 15 minutes more. They should be soft but hold their shape.  They will not get much softer in the oven so be sure they are how you like them.  You will need to try all three types of beans. The water will look yucky since there are black beans in it but that is ok. 

Drain the beans to a colander. (That will help with their color.)
In same pot, saute onions in a small bit of olive oil until they are soft.
 Add mustard, ketchup, vinegar, honey, molasses, and water.  
 Add beans and bacon. Stir.
Bake at 350 degrees, covered for 45 minutes (I use foil.) Uncover and bake for 15 more minutes. If you find your beans are wet you can cook longer or start off with less water but you will need to check it.  3/4 cup works for us and as it sits the beans seem to soak up some.
 Enjoy as is or you can add hot dogs and the kids can enjoy beans and wienies!! No more baked beans in a can for us.
**Can be frozen and thawed out later, heat and eat!

Grilled Baby Back Ribs with Whiskey BBQ Sauce

Low and slow in the oven is the way to start these ribs off right.  Slather on your own homemade sauce to complete them on the grill for the finishing touch.




Grilled Baby Back Ribs with Whiskey BBQ Sauce

1 slab of baby back pork ribs
salt and pepper

Sauce...makes about 1-1/2 cups
2 Tablespoons canola oil
1/2 cup shredded onion
1-1/2 cups water
6 ounce can tomato paste
1/2 cup apple cider vinegar
1/2 cup dark brown sugar
2-1/2 Tablespoons honey
2 Tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
1-1/4 teaspoon liquid smoke
1 Tablespoon molasses
2-3 teaspoons Jim Beam Whiskey
2 teaspoons garlic powder
1/4 teaspoon paprika
1/2 teaspoon onion powder
1/4-1/2 teaspoon red cayenne pepper

Grilled Pizza Dough

2-1/2 cups warm water
3/4 cup shortening
3/4 cup sugar
3-1/2 teaspoons salt
2 eggs
2 Tablespoons yeast
8-1/2 cups flour (I use 6 cups bread flour and 2-1/2 cups fine ground wheat)


Favorite pizza toppings and shredded cheese


Add  water, shortening, sugar, salt, eggs, and yeast in large bowl.
Mix with whisk until shortening is pulverized.
Add wheat flour and whisk.
Add rest of flour and mix. You will have "Hulk" fingers but soon it will....
all blend into a nice ball with a little bit of kneading. Place in greased bowl and cover.
Let rise for one hour. Will almost double in size.
Punch down and pinch off small balls. This one was about 5 ounces. Personal pizzas take less dough than larger ones. You won't want your pizza too large or the dough could rip when you flip it.
Roll as thick as you like. A thinner crust will be crispier.

You can freeze ahead uncooked with wax paper in between. Wrap well and take out as needed. Thaws quickly. You can also grill them all ahead and wrap in plastic wrap or get a large 2 gallon freezer bag (make sure you don't make your crust too big or it won't fit.) 

If you plan to use within a few days put in a greased gallon bag. This batch made at least 5 personals, 5 mediums and enough dough to do almost as much again. You can 1/2 the recipe to make less.

TO GRILL PIZZA:
Making the completed grilled pizza takes some coordination. Take your cheese out ahead to take chill off or use a fresh mozzarella shredded for even better melting power. Add all of your toppings (except cheese), including sauce to a small pan to heat. Meanwhile, work on cooking dough.

Place dough right on grill grates. No need to grease. It won't stick.
After browned, but not burnt, flip with tongs being careful not to tear. Cooking for just a moment to take the 'wet' away from the other side. Transfer to a pizza peel or flat cookie sheet.
Add heated toppings, including cheese and return to grill. Grill pizza, turning as needed to keep from burning until yummy melted and crust is browned.
Remove from grill, cut, and enjoy!
This one was broccoli, cooked chicken with garlic cream sauce.

TO USE PRE-GRILLED FROZEN DOUGH IN THE OVEN:
Add your sauce and toppings to the dough (straight from freezer is ok) and slide it onto a pizza stone that has been preheated in a 450 degree oven. Cook for about 9-10 minutes.  Perfecto! Here are some ideas to get you started.

Meatloaf Patties

Making meatloaf patty style does three things:  It insures everyone gets plenty of topping, your meat is always cooked through, and it saves time since it cooks faster. Bonus?  It's freezable. Zip on down to the bottom to see how to freeze them for later.


Meatloaf Patties

olive oil
1/2 cup onion, diced
1/2 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon Worcestershire sauce
1-1/2 Tablespoon chicken broth
1 teaspoon tomato paste
1 pound ground beef
2-1/2 Tablespoons bread crumbs (use quinoa flakes for GF)
1 egg
1/2 c ketchup (or more to your taste!) BBQ sauce can also be used


Chop/dice onion. I do mine pretty small  so there are never any crunchy onions in my meatloaf.Cook onions in oil with salt/pepper until completely cooked. Turn off heat. Add Worcestershire sauce, broth, and paste. Mix and cool a little. Mix eggs and bread crumbs...Add tomato/onion mixture to it. and beef. Form into 3-4 hamburger patties. Put on jelly roll pan (cookie sheet with sides) and drizzle with ketchup. Bake at 350 degrees for 25-30 minutes or until done. 

To grill... Heat ketchup separately  mostly to get the chill off. Grill meatloaf patties on medium heat for for 5-6 minutes. Flip, add ketchup and grill for another 5-6 minutes.
You can make more than one batch at a time. TO FREEZE....Form patties and put on wax paper lined cookie sheet. Freeze and then bag. To cook, thaw and cook according to directions above.

BBQ Chicken

I love this dish for its simplicity. After a quick browning you can walk away for 35 minutes and get the rest of your meal ready or finished. 


BBQ Chicken

Marinade:
1/2 cup ketchup
1 Tablespoon mustard
2 Tablespoons honey
2 Tablespoons cider vinegar
2 Tablespoons canola oil
1 Tablespoon dark brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
2-4 dashes cayenne pepper


Chicken thighs and legs, breasts work OK too (just may need cooked a little longer)


Mix marinade
Add to gallon bag with chicken and put back in fridge for the day. Overnight is even better.
Cook over DIRECT heat on a grill, skin side down, for 5 minutes. Turn over, pour on leftover marinade and cook over INDIRECT heat for 35 minutes. NEVER lifting grill lid. After the time is done check with thermometer to be sure chicken is 165 degrees.
