Sausage Cheese Balls


Sausage Cheese Balls (Makes about 25 balls)                                  Printable Recipe

3 cups flour 
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup (4 Tablespoons) cold butter
1 pound pork sausage (I used Jimmy Dean regular) 
8 ounces (2 cups) shredded cheddar cheese
1-1/2 cups buttermilk

Pizza Casserole

After I made this, my husband said it reminded him of a pasta dish a popular pizza place makes.  I hadn't thought of it but now that he had mentioned it, yes it does.  It was never one I ordered since the veggies were always still crunchy.  We like soft veggies.  If you like the add ins be sure to cook them first unless you like them crunchy. They also used assorted pasta. Mix and match as you like!


Pizza Casserole

8 ounce box of pasta (I used gluten-free elbow macaroni)
2 - 14 ounce jars pizza sauce (or 3 cups of homemade)
1 pound cooked ground beef
1/2  of a 7 ounce package pepperoni slices (use 2/3 cut in half for in the casserole and 1/3 cut into quarters on top)
2 cups shredded mozzarella (or Italian Blend Cheese)

Other options for stir ins:
mushrooms
green peppers
onions
sausage

Cook and drain pasta.  Mix together all of the ingredients except for the cheese and 1/3 of the pepperoni slices.
 Dump into 9 x 13 pan (you can grease if you want - I never seem to remember to.) If you want to freeze it, slide it into a bag, when ready to use, thaw, dump in dish and bake.
Sprinkle on mozzarella.  I made two dishes, one with and one without mushrooms.
Top with pepperoni slices.
Bake at 350 degrees for 25-30 minutes or until heated through and the pepperoni is nice and crispy on top.

Pork Tenderloin with a Mustard Seed Crust

All I can say about this pork tenderloin is that there are several pieces that aren't even going to hit the plate!

2-3 pound pork tenderloin *

Rub:
2 Tablespoons whole mustard seeds
2 Tablespoons sweet smoked paprika (I like La Chinata brand)
2 Tablespoons onion powder
Approx 1 Tablespoon olive oil
salt and pepper

Basting Sauce:
2 Tablespoons ground mustard seed
5 Tablespoons red wine vinegar
1/2 teaspoon salt
1 egg yolk
2 Tablespoons sugar
(Similar to the homemade mustard I posted a while back only thinner.)

Pre-heat a cast iron pan over low heat.  Pre-heat oven to 350 degrees.

Crush mustard seed with a mortar and pestle.  If you do not have one you can use a spice grinder and gently pulse.
Add the paprika and onion powder and pulse just until mixed. 
Rub the pork with the olive oil and sprinkle with salt and pepper on all sides. 
With a clean hand sprinkle on some of the rub, gently pressing it onto the meat with your other hand.  You will not use all of the rub so keep the meaty hands out of it so you don't contaminate it.  You can use it another time or make less to start.
Your cast iron pan should be nice and warm now.  Drizzle a little bit of olive oil in the bottom and place pork in to sear on all sides. It is already looking wonderful! Cover with a lid or foil and place in oven.  Cooking time will be approximately 30-45 minutes depending on your doneness preference.
While the pork is cooking make your basting sauce.  Like the mustard, place all ingredients over a double boiler.  The best is to use a round bottom metal bowl over a saucepan that has the water in it so you can whisk and get all the ingredients stirred   Whisk continuously until nice and bubbly.  It will not get thick like the mustard. If it is you will need to add a little water to be sure it is thin enough to baste with. (This is where you could use the vinegar if you like it tangier.)
Baste every 10 minutes and turn the meat.  Baste again.  Don't worry about the parts that look like they are getting too brown. It will be fine and it will taste fabulous when you are done. 
New guidelines say 145 degrees internal temperature is OK now for pork instead of the 160 degrees.  You cook it how you want.  Since we are using a pork tenderloin (not a pork loin as shown in the picture) the higher temp will still result in a tender meat.  I do not recommend using a pork loin as it is thick and the outside burns too much waiting for the internal temperature to get to where it needs to.  Also, there is not enough mustard to meat ratio.
Remove the pork from the pan and place it on a cutting board.  Cover with the foil.  Put cast iron back on the heat and add a little bit of chicken broth whisking gently to remove the bits off the bottom. It will make nice little sauce you can drizzle over your meat or drag your bread through.  Slice your meat and serve.

Sausage Gravy
Perfectly Pan Fried Potatoes
Chopped Fresh parsley

Place omelet on the plate, potatoes on the side, and ladle sausage gravy on top.  Sprinkle with fresh parsley.

Easy Quiche

Just as the name says, this quiche is easy to make.  Change up the meats and veggie to suit your taste and/or leftovers you have in the fridge.

Veggies of any sort, cooked.*
1-1/2 cups shredded Mexi-blend cheese or any of your favorite
4 teaspoons flour
1 to 1-1/2 cups cooked meat (chopped ham ,bacon or sausage or any combo)
4 eggs
1-1/3 cup milk
salt and pepper optional (depends on the meat you use)
unbaked pie crust

Preheat oven to 400 degrees.

Drizzle a little olive oil in a non stick pan.  Cook until vegetables are soft.  Cool.  
*I used 1-1/2 cups shredded zucchini and squash and some red onion I had.  
 Chop ham slices.
 Toss together cooled veggies, cheese, and flour. I used our homemade goat mozzarella so it is white. 
 Spread evenly onto unbaked pie crust.
 Add meat evenly over veggies and cheese mixture.
Mix together egg, milk, and optional salt/pepper.
Pour over meat and cheese.  If you have any floaties, press them down with the fork so they are coated.
 Place into oven and either use foil around the crust or a pie shield. 
Bake for 40 to 55 minutes until filling is set.

Bac'n Beans

I think these taste just like pork and beans but with bacon (which is technically still pork) so my husband came up with the name Bacon Beans but to take out the "o" and make it an apostrophe. 

Bac'n Beans

1 pound dry Great Northern beans
4-5 slices bacon, chopped
1/3 cup diced onion (1/2 cup if you chop instead of dice)
1 teaspoon dried sage
Two good pinches of red pepper flakes
4 Tablespoons tomato paste
2 Tablespoons honey
2 cups chicken broth
15 oz can tomato sauce



Place beans in large pot and cover with water.  Bring to boil and boil for 2 minutes.  Turn off heat and let sit covered for an hour.  Drain the beans and return to pot.  Cover with at least 2 inches of water and return to boil.  Simmer, covered, until the beans are soft.  Takes approximately an hour.  Drain.
Meanwhile in a smaller pan cook the bacon until nearly done. Drain off most of the fat.  Add onions.
Cook until golden brown and soft. 
Add red pepper flakes and sage.  Cook for 1 minute. Add tomato paste, honey, chicken broth, and tomato sauce.  Stir to combine and then pour into beans. 
Stir well. Cover the pot with an oven proof lid or two layers of foil. Cook at 325 degrees for 1-1/2 hours, removing cover for last 15 minutes.

Sausage Stuffed Squash

Sausage Stuffed Squash

1 butternut squash
Olive Oil
Salt
1 pound sausage (breakfast, pork, or Italian) You can even de-case brats to use.
1 small Granny Smith apple, peeled and diced
1/3 - 1/2 cup diced onion
1 Tablespoon orange juice
1 Tablespoon maple syrup

Cut squash in 1/2 removing seeds.  Core out the neck by scoring and using a spoon to remove to a cutting board to dice.  You will use this in the stuffing. Place large halves on a baking sheet, drizzle with olive oil and sprinkle with a little salt. Bake at 350 degrees for 25-30 minutes or until soft.  
You are only going to reheat so be sure squash is as soft as you like.
Meanwhile, in a small saucepan, drizzle olive oil, add in onions, apple, diced squash, orange juice, and syrup. Cook until soft.
Add in sausage and cook thoroughly. Be sure to break apart the meat. Drain or pat off the oil if necessary.
 "Stuff" into squash halves.  I sprinkled Parmesan on the one on the left.  They enjoyed them both ways. Return to oven and bake for another 5 to 10 minutes or until heated through. Careful not to burn your sausage. 

The little one enjoyed it enough to ask for it as leftovers to eat in her lunch she takes to school.

Breakfast Pizza

Breakfast Pizza

1-1/2 Tablespoons milk
1-1/2 Tablespoons flour
1 cup milk
4 ounces Velveeta (or 1 cup shredded cheddar cheese)


Any cooked meat of your choice (I used 1/2 lb pork and bacon sausage and 4 or 5 slices of bacon on this one, ham works well too)


8 eggs
1/4 cup milk


pkg low fat crescent rolls ,grilled pizza dough* or quick pizza dough*
shredded Mexican blend cheese




Cook your meats that need cooked and chop up your bacon or ham. Set aside.
Make a cheese sauce.  Add butter to saucepan and melt, stir in flour.  Cook for a little bit to remove raw flour taste.  Slowly pour in milk a little at a time.  Whisking to keep the lumps away. When it is thickened add Velveeta in hunks and stir until melted.  It may seem a little thin but it will thicken some as it cools.
Scramble your eggs.  Beat eggs and milk in large bowl. Pour into nonstick pan and cook until done.  I use a whisk to stir them as it keeps the eggs fluffy and smaller chunks.
Press crescent rolls onto a 12" pizza pan.  You could use an 11"x15" pan but you might need more eggs/meat. (*See below for grilled pizza dough instructions)
Poke holes into bottom with a fork. This will help keep it from puffing up too much.
Bake at 375 degrees for about 8 minutes or until golden brown.  It is not fully cooked but that is ok.  It will cook a little longer after you add the topping and put back in the oven. Don't mind the gaps, the cheese will fill those in.
Pour on most of the cheese sauce and spread to edges.
Sprinkle on the eggs.  I use my hands it's easier to get it even.
Then the meat. This is a good place for the sausage or ham. (See next for bacon) I drizzled a little more cheese sauce on here.
Then cheese, then bacon.  I like bacon on top so it gets crispy.
Bake for another 8 minutes or so until it's all melted and the edges aren't too brown. Cut and serve. This pizza you have to eat with a fork since it's gooey and the crust isn't one solid piece.
Change it up any way you like.  You could add veggies (pre-cooked), change up the meats (or omit) or change up your cheese!

*Top frozen pre-grilled pizza dough or fresh quick pizza dough with cheese sauce and other toppings.  Bake in 450* oven for 9-10 minutes.  YUM!
