Maple and Citrus Glazed Fish

My family likes fish and love REAL maple syrup so I came up with this glaze for something a little different for them.  I am not a fish fan myself but I tried a bite anyway.  It didn't win me over to love fish but it make me think that this glaze would be quite tasty on a piece of chicken and will try it the next time I make this fish for my family. 

Maple and Citrus Glazed Fish

1/4 cup orange juice
1/4 cup pure maple syrup
few dashes or cracks of salt
1 pound white fish (I used Swai)

Combine orange juice and maple syrup in a saucepan. Bring to a boil and cook 5-6 minutes. Add salt and stir.

Preheat cast iron pan with a tiny bit of oil in the bottom in a 350 degree oven. Meanwhile, pat your fish dry.
Pull pan out of oven.  Turn off the oven and turn broiler to high. Place fish in pan and brush on the maple citrus glaze. Broil for 8 to 10 minutes or until fish flakes and is done. 
You can brush more glaze toward the end but I suggest returning the glaze to the heat to boil a bit and also washing your brush before you glaze it.

    Your orange maple glaze looks wonderful. I love orange and maple, so I know this would be delicious. It reminds me of our trip to Vermont several years ago. We were able to see the entire Maple syrup process. Nothing better than real maple syrup.
