Soft, moist, and just the right amount of coffee in the glaze. You'll want to share with a friend (or two!)
Baked Chocolate Buttermilk Donuts with Chocolate Coffee Glaze Printable RecipeDonuts:
1/2 cup buttermilk
1/4 cup butter, melted
1-1/4 teaspoon vanilla extract
1 cup all purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/3 cup packed light brown sugar
Chocolate Coffee Glaze:
3/4 cup powdered sugar
3/4 Tablespoon unsweetened cocoa powder
1-1/2 Tablespoon cold brewed coffee
Preheat oven to 325 degrees and grease your large donut pan.
In small bowl, mix together buttermilk, egg, melted butter, and vanilla.
In medium bowl mix together flour, cocoa powder, baking soda, and sugar. Be sure to make sure there are no brown sugar clumps.Pour wet into dry and mix until just combined.
I used a whisk but it was rather thick. I will probably use a mixer next time.
Scoop batter into a plastic disposable frosting bag. (If you don't have one you could try a quart size plastic bag. A freezer style would be best as they are tougher than the others.)
Cut off end and pipe into donut molds. Only fill about 2/3 the way full. Any fuller and you will lose your donut hole when it rises and bakes.
Don't worry about the little tails they will bake out.
Bake for 11-12 minutes* or until toothpick inserted comes out clean. They will also spring back when you lightly press on them. Let rest in pan for 4-5 minutes before removing to cool. (If you want to freeze, do so now before you glaze them.)
Mix together powdered sugar and cocoa.Stir in coffee a little at a time until it ribbons off the spoon. Too runny and it will not stick to your donut but just roll down the sides. Too thick and it won't dry and it will also be too much effort to drizzle.
Pour into a plastic disposable frosting bag. Again, you can use a small quart bag, make sure you snip your hole tiny. Drizzle glaze onto donut.
I personally thought this was plenty of glaze but if you really want to go full on top dunk you can make more glaze and put it in a flat bottom bowl or container and dip the tops of your donuts.
This recipe makes 10 delicious donuts. The donut bases remind me of those chocolate snack cakes I used to eat as a kid which gives me many more ideas!
These are best within a day (unless you freeze them) but doubt if they would be around that long. ;)
