Chewy Double Chocolate Chip Cookies

The only thing that would be better than a tall glass of milk is sandwiching a little bit of ice cream in the middle of two of these and making an ice cream sandwich!

Chewy Double Chocolate Chip Cookies                                     Printable Recipe  

1-1/2 cup brown sugar
2/3 cup shortening
1 teaspoon vanilla
2 eggs
1-1/2 cup flour
1/3 cup unsweetened baking cocoa
1/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups mini semi-sweet or milk chocolate chips
1/2 cup chopped walnuts or pecans (optional)


Preheat oven to 375 degrees.  In medium bowl beat together brown sugar, shortening, and vanilla. Mixture will be crumbly.
Add eggs and mix until blended. 
In separate bowl mix together flour, cocoa, baking soda, and salt. 
Add to egg mixture and mix until just blended.   Mix in chocolate chips (and nuts if using.)
I baked two sizes of cookies.  My small cookie scoop slighted mounded with 1-1/2 T of dough makes a 2" cookie and will make around 40 cookies.  The medium cookie scoop with 3 T of dough made a 3" cookie and this batch of dough would make about 20 cookies.
Bake small cookie for 7-8 minutes and medium cookie for 8-9 minutes.  Cool on sheet for 2 minutes.  Remove to cookie rack to finish cooling.
